yummy summer recipe

I love getting new recipes, so I thought I would post one of my favorite summer recipes. I like to make it with chicken and eat it for lunch, but it is also good without the chicken if you just want it for a side. I have also added mandarin oranges to it before . . . really yummy.


Fruity Chicken Salad
1 envelope Good Seasons Italian salad dressing mix
1/4 cup vinegar (I usually use rice vinegar)
3 cups cooked orzo pasta (about 8 oz. dry)
2 cups chopped cooked chicken (I have also used canned chicken)
1 cup red and green seedless grapes (I sometimes add more)
  1. Prepare dressing in a small bowl as directed on envelope.
  2. Mix orzo, chicken, and grapes in large bowl. Add 1/2 cup of the dressing; toss to mix well. Cover.
  3. Refrigerate salad and remaining dressing 1-2 hours. Just before serving, mix in remaining dressing.
